The Sunflower You Can Eat

Helianthus tuberosus, the Jerusalem Artichoke (also called Sunchoke or Sunroot), is a native North American perennial that produces edible tubers with a mild, nutty flavor reminiscent of water chestnuts when eaten fresh. Bake them like potatoes, slice them raw into salads, or roast them — they’re incredibly versatile. In late summer, plants also produce cheerful yellow sunflower-like blooms up to 6 feet tall.
