Jerusalem Artichoke (Helianthus tuberosus) tubers — also called Sunchokes — are one of the most productive and low-maintenance edible perennials you can grow. The knobby tubers have a sweet, nutty flavor similar to water chestnuts — delicious roasted, sautéed, mashed, or eaten raw in salads. They're also a prebiotic powerhouse, rich in inulin fiber that feeds beneficial gut bacteria.

Plant tubers in spring and harvest a generous crop in fall after the first frost sweetens the flavor. Plants grow vigorously to 6–10 feet tall, producing cheerful yellow sunflower-like blooms in late summer that attract pollinators. Once established, they return reliably year after year from tubers left in the ground.
