Jerusalem Artichoke (Helianthus tuberosus), also called Sunchoke, is a tall perennial sunflower grown for its underground tubers and late-summer yellow flowers. The tubers have a crisp texture and mildly nutty flavor and can be roasted, sautéed, mashed, or used raw.
Plant tubers in a sunny site with room to spread. Plants can reach 6–10 feet tall and may return in following seasons from tubers left in the soil. The yellow sunflower-like blooms may be visited by pollinators.
